Today we will be discussing stevia and its benefits but also what to look out when we are purchasing it.
In a previous post we discussed how foods are rated in what we call a Glycemic Index Chart which takes into consideration the glucose levels of the food itself and the lower the index level the slower that sugar goes into our blood stream, so we don't get that instant high we don't need.
At the very end of today's post there will be a chart so you can check for yourself the Glycemic Index of the sugars you intake daily.
As we have Stevia as our show star today I have to state the following:
It is a natural sweetener, actually a plant original from South America that is 200 times sweeter than sugar itself.
It does not cause a blood sugar spike and this alone is beneficial to health.
Suitable for diabetics.
Harmless to oral hygiene, avoiding cavities and maintaining teeth health.
It contains no calories and is great for substituting when on sugar craving sweet hunts! :)
Having said that and before you run off to the supermarket to buy it please be aware that we want to keep it a natural plant sweetener as it is so we want to avoid anything processed! Now this is the tricky part as almost all manufacturers make more money when being able to produce bigger amounts with less base product so they end up mixing the natural goodness of stevia with dextrose, maltose and excess glucose...what happens then? we have a processed sweetener, with manufactured "natural flavors" and sugar! which we wanted to avoid all the way.
So watch out for the following and DO NOT BUY!

Be aware as well that even some organic stevia products have agave in the ingredient list which you want to fully avoid as is mainly full of fructose ( although scores a low index in the GI score it's because its content of glucose is low but extremely high in fructose therefore a product to try avoiding). I have also seen some silica in the labels of a few organic stevia brands...what is silica?! well you know how when you purchase some protein powders or supplements or even a handbag sometimes they add this silica gel pouch? which actually says throw away...do not eat...desiccant silica gel....unfortunately manufacturers use it to improve the flow of powder substances but for human consumption it is something that irritates both digestive and respiratory tracts so lets try staying away if possible.
What to look for in the labels is the following :

100% pure
Ingredient list should look like this : Stevia leaf extract NOTHING ELSE!

Fancy some yummy recipes? Starting a more healthy lifestyle can seem a bit overwhelming at the beginning but once you get used to your new grocery list and what to be aware of in the labels you will be doing it thesame way you breathe.
Many people may think you have to say goodbye to all you sweet treats once on healthy habits but I am here to give you the best news! There is no need for that! you can enjoy cookies, cakes, pastries and pancakes and even sprinkle raw cacao ( chocolate in its purest form) on them. Don't believe me? try these recipes and let me know :)
Banana blueberry cake
you will need:
1 cup of coconut flour
3 well ripped bananas
1 cup frozen blueberries
6 large eggs (room temperature)
1/2 a cup of melted coconut oil
1/2 a cup of almond milk (room temperature)
1 teaspoon of baking soda
half a teaspoon of salt
1 teaspoon of stevia
Let's get cooking!
Step1. preheat oven at 170 celsius
Step 2. In a bowl add eggs, coconut oil, almond milk, stevia., salt and baking soda and whisk well.
Step 3. Mash the bananas, add to the mix and whisk well.
Step 4. Add the coconut flour and mix well.
Step 5. The dough should be runny and sticky. If not, pour same amounts of coconut oil and milk as you mix to make it smoother. It may happen if bananas are not well ripped :) not to worry.
Step 6. Incorporate frozen blueberries to the mix
Step 7. Oint your baking tray in some coconut oil and pour the dough inside.
Step 8. Bake for 45 mins and check with a toothpick as it may need another 10-20 minutes
Step 9. When ready remove from the oven and side it for 15 minutes, then remove from tray and place on a rack to cool down.

Stevia choco mousse
You will need:
2/3 cup pitted dates (any variety)
2 large and ripe avocados. Pitted, peeled and chopped ( approximately 2 cups )
1/3 cup of water or non dairy milk of your choice
1 teaspoon of stevia. Add more later if you wish
Pinch of sea salt
1/3 cup of raw cacao powder
Let's get cooking!
Step 1. Cover the dates with hot water and let stand for 15 minutes, then drain.
Step 2. Combine the avocados, water, stevia, and salt in a high- speed blender or a food processor. If you don’t have a high-speed blender, use the food processor here, not a conventional blender. Blend until smooth and combined.
Step 3. Add the dates and blend again until well-combined and smooth. Add the cacao powder, put on the lid, and blend again until smooth. Taste for sweetness and add more stevia, if desired. Chill or serve immediately.
Store leftover mousse in an airtight container in the refrigerator for up to 1 day.
Variation: carob powder can be used instead of cacao powder, and 1/3 cup maple syrup or coconut nectar can be used in place of dates, just reduce or omit the water. Also add a pinch of maca powder for a nuttier taste
Banana and Date Bread
you will need:
1/2 cup creamy roasted almond butter
2 eggs (room temperature)
1 teaspoon raw organic honey
1 teaspoon vanilla extract
3 - 4 medium medjool dates, pitted
1/2 small to medium ripe banana, mashed
1/8 teaspoon sea salt
1/4 teaspoon baking powder
1/2 - 1 teaspoon cinnamon (depending on how much you like cinnamon)
1/8 teaspoon nutmeg optional
Let's get cooking!
Step 1. Preheat oven to 170 celsius. Place dates in a bowl of warm water to soften them up.
Step 2. Place almond butter in a bowl and use a hand mixer. Mix almond butter until creamy
Step 3. Drain dates and place in a food processor. Process dates into small pieces.
Step 4. Mash banana using a fork. Add banana, dates, eggs, honey, and vanilla to bowl with almond butter. Mix until everything is well incorporated. Add dry ingredients - salt, baking powder, cinnamon, and nutmeg. Mix again until ingredients are combined.
Step 5. Grease and 8 x 8 baking pan (I used coconut oil spray). Place batter in the dish. Bake for 18 - 20 minutes until toothpick comes out clean when inserted into the middle of dish. Do NOT over bake or the bread will become dry. After 15 minutes, I check my bread every minute or two.
Step 6. When ready remove from the oven and side it for 15 minutes, then remove from tray and place on a rack to cool down.

¡¡¡¡Hola a tod@s!!!! Tengo la esperanza de que estéis logrando incorporar algunos de los trucos y consejos que os he ido dando y que poco a poco los tengáis como hábitos. Sé de buena mano que algunas en concreto ya lo estáis haciendo y me siento súper orgullosa de vosotras y feliz de que hayáis compartido esos cambios conmigo. Me inspira a seguir escribiendo y estudiando :)
Hoy vamos a hablar del edulcorante natural stevia o estevia y sus beneficios y de cómo leer sus envases para así elegir el producto más natural y beneficioso.
En un post anterior hablamos de cómo los alimentos se clasifican en lo que llamamos una Tabla de índice glucémico (IG) que tiene en cuenta los niveles de glucosa existentes en ciertos productos alimenticios; donde el nivel de índice más bajo indica una lentitud con la que el azúcar entra en nuestro torrente sanguíneo impidiendo así un "subidón" o pico de azúcar en el organismo.
Al final del post de hoy habrá un gráfico para que puedas comprobar por ti mismo el índice glucémico de los azúcares que ingerimos diariamente.
Hablemos de nuestra estrella de hoy Estevia:
Es un edulcorante natural originario de una planta de América del Sur, que es 200 veces más dulce que el azúcar en sí.
No provoca ese pico rápido de azúcar en sangre por lo que es beneficioso para la salud.
Apto para los diabéticos.
Inofensivo para la higiene bucal, evitando así las caries y manteniendo la salud dental.
No contiene calorías y es ideal para usarlo como sustitutivo cuando nos dan esos ataques de azúcar :)
Dicho esto y antes de salir corriendo al supermercado a comprarlo por favor ten en cuenta que queremos mantenerlo como un edulcorante natural proveniente de una planta y que intentaremos por lo tanto evitar cualquier producto estevia procesado. Ahora bien, ésta es la parte difícil, ya que casi todos los fabricantes hacen más dinero cuando son capaces de producir cantidades más grandes con menos cantidad de producto base y terminan mezclando la calidad natural de estevia con dextrosa, maltosa y exceso de glucosa ... ¿qué pasa entonces? tenemos un edulcorante elaborado, con "sabores naturales" manufacturados y ¡azúcar! que queríamos evitar todo este tiempo.
Así que ten cuidado con lo siguiente y ¡NO LOS COMPRES!

Ten en cuenta también que algunos productos de estevia orgánicos tienen agave en la lista de ingredientes que también intentaremos evitar totalmente ya que es principalmente fructosa (aunque anota un bajo índice en la tabla IG es porque su contenido de glucosa es bajo, pero muy alto en fructosa, por tanto un producto para tratar de evitar). También he visto algunas listas de ingredientes que contienen sílice en las etiquetas de algunas marcas de estevia orgánicas ..... ¿¡que es sílice ?! ¿¡recuerdas cuando compras polvos de proteína o suplementos o incluso un bolso de mano que a veces agregan una bolsita pequeña blanca y llena de bolitas que indica en el exterior bolsa de gel de sílice?, de hecho se puede leer en las bolsas " tirar ... no comer ... gel desecante de sílice", lamentablemente los fabricantes lo utilizan para mejorar la fluidez de partículas de las sustancias en polvo, pero para el consumo humano es algo que irrita el tracto digestivo y las vías respiratorias por lo que intenta no comprar esos productos siempre que puedas.
Lo que debes buscar en las etiquetas es lo siguiente:
Orgánico
100% puro
La lista de ingredientes debe tener este aspecto: extracto de hoja de Estevia ¡NADA MÁS!

¿Te apetece empezar a descubrir recetas deliciosas llenas de dulce? Tener un estilo de vida más saludable puede parecer un poco abrumador al principio pero una vez te acostumbras a la nueva lista de la compra y lo que evitar de la lista de ingredientes de algunos productos, todo resulta tan fácil como respirar.
Mucha gente puede pensar que tiene que decir adiós a todos los dulces una vez pasado a un nuevo estilo de vida pero ¡tengo las mejores noticias! ¡No hay necesidad de renunciar a nada! se puede disfrutar de las galletas, tartas, pasteles y crepes con cacao crudo (chocolate en su forma más pura) ¿No me crees? prueba estas recetas y hazme saber lo que opinas :)
Bizcocho de plátano y arándanos
Ingredientes:
250 g de harina de coco
3 plátanos bien blanditos
220 g de arándanos congelados
6 huevos grandes (temperatura ambiente)
120ml de aceite de coco derretido
120 ml de leche de almendras (temperatura ambiente)
1 cucharadita de bicarbonato de soda
media cucharadita de sal
1 cucharadita de estevia
¡A cocinar!
Paso 1. Precalienta el horno a 170 grados centígrados
Paso 2. En un bol echa los huevos, aceite de coco, leche de almendras, la estevia, sal y el bicarbonato de soda y batir bien.
Paso 3. Machaca los plátanos, agrega a la mezcla y bate bien.
Paso 4: Añade la harina de coco y mezcla bien.
Paso 5. La masa debe estar líquida y pegajosa. Si no, vierte mismas cantidades de aceite de coco y leche para que quede mas suave. Puede suceder si los plátanos aún están maduros o están demasiado fríos, no te preocupes :)
Paso 6. Incorpora los arándanos congelados a la mezcla
Paso 7. Unta tu molde con un poco de aceite de coco y vierte la masa en el interior.
Paso 8. Hornea durante 45 minutos y chequea con un palillo el estado del bizcocho por dentro, ya que puede necesitar otros 10-20 minutos
Paso 9. Cuando esté listo retira del horno y deja reposar 15 minutos, saca el bizcocho del molde y déjalo enfriar sobre una rejilla.

Choco mousse con Estevia
Ingredientes:
500-750 g de dátiles deshuesados (cualquier variedad)
2 aguacates grandes y maduros
80 ml de agua o leche sin lactosa de tu elección (coco, almendra, avena...)
1 cucharadita de estevia. Añade más luego si lo deseas
Una pizca de sal marina
80 g de polvo de cacao crudo
¡A cocinar!
Paso 1. Cubre los dátiles con agua caliente y deja reposar durante 15 minutos, escurrir.
Paso 2. Combina el aguacate, el agua, la estevia, y la sal en una licuadora de alta velocidad o un procesador de alimentos. Si no tienes una licuadora de alta velocidad, utiliza el procesador de comida con este paso, no una licuadora convencional. Mezcla hasta que quede suave y bien combinado.
Paso 3. Añade los dátiles y mezcla de nuevo. Añade el polvo de cacao y mezcla hasta que quede suave. Pruébalo para ver si está lo dulce que quieres y añade más estevia si lo deseas.
Enfriar o servir inmediatamente.
Guarda el mousse sobrante en un recipiente hermético en la nevera máximo 24 horas.
Variación: 80 ml de jarabe de arce o néctar de coco se puede usar en lugar de dátiles, sólo hay que reducir u omitir el agua. También puedes añadir una pizca de polvo de maca para un sabor a nueces exquisito :)
Pan de plátano y dátiles
Ingredientes:
150 g de cremosa manteca de almendra tostada orgánica sin azúcares añadidos
2 huevos (temperatura ambiente)
1 cucharadita de miel orgánica cruda
1 cucharadita de extracto de vainilla
3-4 dátiles medjool medianos sin pipa
La mitad de un plátano medio blandito
Una pizca de sal
Un cuarto de cucharadita de levadura en polvo
1 cucharadita de canela (dependiendo de cuánto te gusta la canela)
1 pizca de nuez moscada opcional
¡A cocinar!
Paso 1. Precalienta el horno a 170 grados centígrados. Coloca los dátiles en un recipiente con agua caliente para ablandarlos.
Paso 2. Pasa la manteca de almendra a un bol y con una batidora de mano mézclala hasta que quede cremosa
Paso 3. Escurre los dátiles y colócalos en un procesador de alimentos y procésalos hasta que queden en trocitos pequeños.
Paso 4. Machaca el plátano usando un tenedor. Añade el plátano, los dátiles, los huevos, la miel y la vainilla al bol con la manteca de almendras. Mezcla hasta que todo esté bien incorporado. Agrega los ingredientes secos - sal, levadura, canela y la nuez moscada. Mezcla de nuevo hasta que se combinen bien los ingredientes.
Paso 5. Engrasa un molde para hornear (yo normalmente uso spray de aceite de coco, es más cómodo). Coloca la masa en el plato. Hornea durante 18-20 minutos hasta que un palillo salga limpio al insertarlo en el centro del molde. No lo dejes en el horno demasiado tiempo o el pan se secará. Después de 15 minutos en el horno, chequea cada dos minutos.
Paso 6. Cuando esté listo retira del horno y deja reposar 15 minutos, saca el pan del molde y déjalo enfriar encima de una rejilla.
